From Full City to PALACE
Palace's story brings together two longtime Eugene favorites: Full City Coffee and Palace Bakery.
Owner Lisa Truelove grew up around her family's bakery and spent nearly two decades at Full City Coffee Roasters, learning the business from roasting and wholesale to café operations and visiting coffee farms at origin.
In 2020, Lisa purchased Full City's Pearl Street café and the adjoining Palace Bakery, bringing them together under the Palace name. What followed was a new chapter for a familiar Eugene gathering place, carrying forward its history while giving new life to its coffee and bakery.
It Started with Two Bags of Coffee.
Our relationship with coffee growers in El Salvador began in 2021, when Lisa was introduced to two bags of coffee brought back from the country. Impressed by what she tasted, she traced the beans back to their farms and traveled with her family to meet the growers.
Working together, they developed Palace's house blend, building a connection between the people who grow our coffee and the community we serve it to.
For us, good coffee begins with knowing where it comes from and appreciating the people behind it.
A Eugene Roast
Our coffee's journey continues in Springfield, Oregon, where green coffee beans arrive at our roastery, ready to become the coffee we serve across Eugene.
Here, we roast our own coffee, developing the flavors that make their way into every bag of beans and every cup served at our cafés.
From the roastery to our cafés, each roast becomes part of the daily routines of the people and communities we serve.
What begins with the people who grow our coffee continues with those who roast, prepare, and share it. It's these relationships, from farm to café, that make Palace what it is today.
